What is a Humidifier?
A humidifier is a piece of equipment that controls the moisture levels in the air in an oven chamber.
Why should bakeries use a humidifier?
Proper humidification has a profound influence on both product quality and the finished baked good. If relative humidity levels are too high or low, the yeast may be affected, causing air bubbles to develop in the dough. This, in turn, can dry out the dough and produce a harder crust, resulting in a poor quality product.Proper humidity levels gives bread a golden, crisp crust that is visually appealing and pleasing to eat. Additionally, water vapor levels in the oven can affect the baking times of the products. Maintaining an optimal humidity level in the oven allows for less energy use and creates a better quality product. A humidifier can even improve the overall health of bakers by reducing flour dusting. Flour dust can cause bakers to develop allergies to the flour dust, resulting in respiratory issues and also illnesses in the staff. Water vapor placed into the air by the humidifer binds to the flour dust, weighing it down, preventing it from being suspended in the air where it can be breathed by the staff.
