What is an Intermediate Proofer?
An intermediate proofer is a machine that controls heat and humidity levels so that the dough can rest between the dividing stage and the molding stage of production. This allows the dough to release the tension created by the dividing process and lengthen during the forming process. The length of the intermediate proofing time is dependent upon the ability of the dough to relax after dividing. The tighter the dough, the more time is needed for intermediate proofing. Without an adequate intermediate proofing, the dough may be tight, rubbery, and may tear when going through the molder sheeting rollers.
