What is a Diving Arm Mixer?
A diving arm mixer (often also called a Twin Arm Mixer, a Beater Arm Mixer, or an Artofex-Style Mixer) is a mixer that recreates the dough mixing process of human hands - kneading. This ensures a natural leavening process without artificially warming the dough. This mixer is ideal for more fragile doughs, such as brioche. These machines come in a large range of sizes from small mixers (50kg capacity) ideal for small bakeries to massive industrial mixers (120kg capacity) ideal for very large bakeries.
