What is a Pass-Thru Retarder-Proofer?
A pass-thru retarder-proofer is a combination retarder-roofer unit that has two openings, one on either side of the cabinet. As new trays of product are placed inside the cabinet, trays already inside get pushed toward the other opening and can be removed to be placed into an oven for baking. Pass-thru retarder-proofers come in a large range of sizes and are capable holding large volumes of products. Smaller pass-thru retarder-proofers can also be fitted with casters for easy relocation.
