What is a Proofing Basket?
A proofing basket, also know as a brotforms and bannetons, is a basket specifically designed for the proofing of doughs and feature materials that help in proofing process, such as rattan. These baskets allow the dough to hold its shape as it proves, and it wicks away moisture from the crust.As the gluten in the dough relaxes, shaped loaves will spread out and lose their shape. The basket supports the dough as it proofs and prevents the dough from spreading and flattening.
These baskets come in a large variety of sizes and shapes. The baskets can be lined with linen to prevent the dough from sticking to the basket or kept bare to allow the basket to leave a decorative impression on the dough.
