What is a Steam Unit?

A steam unit is a generator that can be attached directly to a proofer, an oven, or other bakery equipment to create steam. Steam units act similarly to humidifiers by introducing water vapor into the baking process in order to improve the color, crispiness, flavor, and texture of the final product.
